The very first collaboration within Once Upon A Time, where Chef Jeanette comes together with another chef in creating something together. Yeo Min, a talented individual who has immense interest in Chinese pastry will create one beautiful Chinese pastry, and sharing one key ingredient, Jeanette will create a French pastry with some Asian influence.
This key ingredient, the red bean paste, is made from scratch until it attains its luscious and velvety smooth texture. Yeo Min’s Peach Blossom Pastry is like a delicate flower, its layered petals unfolding to reveal the red bean paste within. Jeanette’s creation of the Matcha and Red Bean Madeleine is an East meets West rendition on its own, French technique paired with Asian flavours. Matcha and red bean is like edible poetry where the earthy matcha embraces the richness of red bean, an iconic and perfect pairing.
Jeanette and Yeo Min crossed paths when she took part in the Channel 8 baking competition “Crème de la Crème” and she impressed Jeanette with her creativity and passion. 2 years on, Yeo Min graduated from Sunrice Globalchef Academy, took part in the World Summit Apprentice Chef competition placing second, and published Chinese Pastry School where she shares in depth and comprehensive information on Chinese pastry making.
