We’re bringing something really special to you with a collaboration that we’ve been planning for a long time. Joining Chef Jeanette is Chef Then Chui Foong, an established chocolatier with 30 years of experience. She brings with her a wealth of expertise and innovative flair. The famed Champagne Truffle Snowskin Mooncake from Raffles Hotel is the brainchild of Chef Chui Foong.
This collaboration celebrates the artistry and innovation that can be achieved when tradition meets modern creativity. This mooncake collection reflects their shared passion for creating artisanal and exceptional memorable desserts, making it a must-have delicacy for this year’s Mid-Autumn Festival.

Just Peachy boasts a delicate pastel pink snowskin that exudes elegance. The snowskin is infused with fresh peach puree, imparting a gentle sweetness and a fragrant peach aroma.
As the first bite introduces the subtle hints of peach, the white bean paste filling that is enriched with premium dried peach, adds an additional burst of vibrant peach flavour.
We then go to the heart of the mooncake featuring a luscious peach truffle center, with subtle notes of lime and dill, and a touch of peach liqueur. The truffle center bursts with intense juicy peach, balanced perfectly by the zesty hints of lime and the herbaceous undertone of dill.

Chef Profile: Then Chui Foong
A chocolatier with more than 30 year of experience, Chef Chui Foong has participated in a total of 8 international competitions, bringing home 4 Gold, 2 Silver, 3 Bronze medals and Overall 3rd in Stavanger, Norway among 26 countries in the world.
Her culinary career experience includes working at various 5-star hotels, restaurants, pastry and chocolate shops in the world. She has been conducting professional training, demonstrations for pastry and chocolate professionals since 1996, such as master classes, private training, promotions, media launches and demonstrations in many countries.
This also includes being a Lecturer and Chef Instructor at Singapore Republic Polytechnic for Diploma in Restaurant & Culinary Operation and Diploma in Hotel Hospitality Management.
Chef Chui Foong is currently the Singapore Ambassador of Elle et Vire by Maison De L’Excellence. With numerous awards under her belt, she continues to craft exquisite works of art out of pastries and chocolates.
In recognition for her contributions to the pastry, bakery industry and her drive for continuous learning, she has been awarded the prestigious Skillsfuture Fellowship Award in 2019 by President of Singapore Her Excellency Halimah Yacob.
