This was my creation in 2019 during the Lunar New Year. I love pineapple tarts and I thought of combining a French pastry with an Asian element. The financier envelops a pineapple jam, made in our very own kitchen, in its center and this combination is pretty magical. There have been many requests for it since it made its debut in 2019 and here it is now. Baked and sent out fresh on the day itself so please have it when it’s at its best.
